چکیده
Réblová Z. (2012): Effect of temperature on the antioxidant activity of phenolic acids. Czech J. Food Sci., 30: 171–177. The effect of temperature on the antioxidant activity of phenolic acids (gallic, gentisic, protocatechuic, syringic, vanillic, ferulic, caffeic, and sinapic; 0.5 mmol/kg) was studied in pork lard, using an Oxipres apparatus, at a temperature range of 90°C to 150°C. The antioxidant activity of all studied compounds decreased with increasing working temperature, whereas a linear relationship (P < 0.01) existed between temperature and the antioxidant activity in all cases. However, the relative rate of the antioxidant activity decrease with increasing temperature (i.e. in comparison with the activity at 90°C) was not the same for all studied phenolic acids. Easily oxidisable phenolic acids (i.e. gallic, gentisic, protocatechuic, and caffeic) showed a slower decrease in antioxidant activity with increasing temperature (in comparison with their activity at 90°C) than the less oxidisable ones (i.e. syringic, ferulic and sinapic acids, and especially vanillic acid). Consequently, only gallic, gentisic, protocatechuic, and caffeic acids showed a significant antioxidant activity at 150°C and vanillic acid was active only at 90°C.

Evaluation of antioxidant activity of three common potato (Solanum tuberosum) cultivars in Iran
Objectives: Potato (Solanum tuberosum L.), as a whole food, contains high levels of vitamins and important antioxidants including phenolic acids, carotenoids and flavonoids. The objective of this study was to determine the total phenolic content and antioxidant activities of three common potatoes (Solanum tuberosum) cultivars in Iran i.e., Savalan, Agria and Sante. Materials and Methods: Pheno...
متن کاملEffects of chilling and high light stress on phenolic metabolism and antioxidant activity of Aloe vera L. plants
High light (HL) can limit plant photosynthetic activity, growth and productivity. The HL effect was more pronounced in plants grown at low temperature. In order to determine the effects of chilling stress (4 0C) and light intensities (450 and 850 µmol m-2 s-1) on antioxidant defense system and phenolic metabolism of Aloe vera L., an experiment was conducted in a randomized complete block desi...
متن کاملThe effect of Chitosan on antioxidant activity and some secondary metabolites of Mentha piperita L.
Plants are almost reach sources of phenolic compounds such as flavonoids which are the most importantnatural antioxidants. Antioxidant compounds are essential for protecting human body against oxidativestress. However use elicitors could increase the antioxidant activity of plant. The purpose of this studywas to evaluate the effects of Chitosan on the content of phenolic and flavonoid compounds...
متن کاملThe Effect of Germination on Phenolic Content and Antioxidant Activity of Chickpea
Germination is one of the most effective processes to improve the quality of legumes. Vitamins and some other compounds that might be considered beneficial as antioxidants, often change dramatically during the course of germination. Antioxidants might be defined as compounds which are capable of preventing, delaying or retarding the development of rancidity or other flavor deterioration in food...
